Sfeeha is a popular baked appetizer in Palestine and the wider Levant, considered a traditional street-food staple sold in local bakeries throughout the day. It differs from closed pies in its open-faced shape that shows off the meat filling on top.
The filling is made from minced meat mixed with very finely chopped onion, tangy pomegranate molasses, and spices, spread over discs of yeasted bread dough before baking in a very hot oven so they cook quickly, staying soft at the base and crisp at the edges.
